Day 1

Meet your local guide in the old mining town of Pinal de Amoles. We will then visit some of the numerous bio-intensive vegetable gardens found throughout the Sierra Gorda.

Lunch will be served in Fonda Doña Mary, one of the traditional restaurants along our Flavor Trail. There, you can try delicious freshly-made tortillas paired with traditional dishes, such as beef with garbanzo beans.

We will then continue on to Centro Tierra located in Jalpan de Serra, where we will attend a digital photography exhibition and a discussion on the biodiversity of the Sierra Gorda, led by the local photographer who took the photos.

You will end the day with a traditional dinner and a well-deserved rest.

Day 2

An early breakfast in Centro Tierra will be followed by a presentation on the Grupo Ecológico Sierra Gorda’s conservation work.

We will then visit our educational farm, Rancho Tonatico, where we will be given an introduction to holistic management and an explanation of how crop and livestock production can be used to capture carbon. After the presentation, an organic lunch will be served.

After filling our stomachs with delicious, organically produced food, we will learn how to make organic fertilizers and other soil amendments. We will then return to Centro Tierra, where you will have a chance to relax next to a bonfire and enjoy the sounds of nature while we serve you dinner.

Day 3

After breakfast in Centro Tierra, we will return to Rancho Tonatico. Our first activity there will be an introduction to keyline design, followed by practical application of these same concepts in the field. Afterwards, we will take part in a practical demonstration of how to monitor soil health.

Once we complete the sessions, we will have time to walk through a beautiful forest before sitting down for another delicious organic meal. After lunch, we will travel to Pinal de Amoles, where we will conclude our trip.
